The new year is always a time to reflect on last year. We can notice our accomplishments and challenges, bring awareness to those areas in our lives in which we are doing well and provide insight to the areas that we would like to improve. This reflection helps lead us to the changes we want to make to create a more positive, fulfilling and healthier life.
Eating healthier continues to be one of the most popular New Year’s resolutions year after year. People start their new year with a fresh perspective, motivated to eat healthier in order to lose weight, improve health and well-being, feel better and have more energy, and to make a positive impact on our environment and economy. Perhaps you are considering eating healthier and following a plant-based diet as your resolution this year, or this has been a previous resolution that you haven’t maximized in the last year.
Research shows that finding the personal value and meaning behind your resolutions is the key to creating successful and sustainable changes. When we value something, it becomes an important personal priority. It estimates livestock accounts for 18 percent of all greenhouse gas emissions, which weighs in significantly more than transportation. One of the biggest ways to save the environment and reduce global warming is to shift to a plant-based diet. Producing just half a pound of meat for a hamburger releases as much greenhouse gas into the atmosphere as driving a 3,000-pound car nearly 10 miles. According to Al Gore’s Live Earth organization report, “if everyone went meatless for one day, the U.S. would save 100 billion gallons of water, enough to supply all the homes in New England for almost four months and 70 million gallons of gas, enough to fuel all the cars of Canada and Mexico combined with plenty to spare.”
